Marzipan offers a unique, complex flavour born from the meeting of almonds and sugar. The sweetness of sugar is balanced by the subtle bitterness of almond: a harmonious balance on the palate.

Three criteria make all the difference.

The proportion

The proportion

The proportion of the two main ingredients, almonds and sugar: a 33 % marzipan contains 33 % almonds and 67 % sugar; a 50 % is half and half. Silly produces the 22 %, 30 %, 33 %, 40 % and 50 % qualities.

The origin

The origin

The origin of the almonds: USA, Spain or Portugal. Silly works with almonds bought at source, in the countries where they are grown and processed: shelled, blanched and packed.

The addition

The addition

The optional addition of ingredients: candied orange cubes, raspberry paste, pistachio paste… Speciality marzipans, perfect for coating in praline: orange, tutti-frutti passion fruit, raspberry, pistachio and mocha.

All about marzipan

What's the difference between marzipan and almond paste?

In Belgium and France, « massepain » and « pâte d'amande » (almond paste) mean the same product: a paste of finely ground blanched almonds and sugar. The difference is the almond ratio, the higher it is (up to 50 % at Silly), the finer and more fragrant. « Massepain » is common in Belgium, « pâte d'amande » in France.

What almond contents do you offer?

Five qualities: 22 %, 30 %, 33 %, 40 % and 50 % almonds. The higher the content, the more pronounced the almond character.

Where do your almonds come from?

From Spain, the United States and Portugal. We taste, smell and test them before every production run.

Can the marzipan be customised?

Yes: texture, almond content, flavour, colour and format are adjustable. Contact us for a sample.
